When making homemade ice cream (without an ice cream maker & w/o rock salt) how can you prevent icy texture?

I thought my ice cream would have turned out great if it wasn’t for the fact that it was more like ice milk than ice cream. Was that due to the cheap plastic container I froze it in that prob caused freezer burn, or the ingredients (no eggs- just milk, half and half, salt, sugar & heavy cream)? Would cream cheese make a difference? Thanks!
